Cupcake of The Week: Piña Colada

This past weekend was SO beautiful. All I could think about was piña coladas on the beach. Hence, this cupcake was born.

Recipe:

For the cupcakes:

1 yellow cake mix
1 20oz can crushed pineapple (with juice)
1 small package instant french vanilla pudding
2 tbsp pina colada drink mix
1 10oz jar maraschino cherries

Preheat oven to 350°F.

In a stand mixer (I think it helps this mixture come out better than mixing by hand) mix together cake mix, pudding mix, and pineapple until blended. Line your cupcake pan with paper liners, and fill each cup 3/4 full – the batter is really thick, so an ice cream scoop, or a rounded tablespoon is about the perfect amount. Press a maraschino cherry into the center of each one.

For the Frosting:

1 stick butter, softened
1 tsp clear vanilla extract
4 c. powdered sugar
1 tbsp pina colada drink mix or pineapple juice
1 tbsp milk
1 tbsp rum (or add another tbsp of milk if you’d rather leave out the alcohol)
(If frosting is TOO thick, you can always add a tiny bit more milk.)
Shredded coconut

In a stand mixer (I heart my Kitchenaid) mix the butter, shortening and vanilla until creamy. Start adding the sugar, one cup at a time, until mixed. Add drink mix, milk and rum. Whip until it’s light and fluffy.

Frost cupcakes, and then dip into shredded coconut. You can garnish with a piece of pineapple, or another cherry, just make sure they’re drained of all liquid, and you add them immediately before you serve them.

      They’re really yummy! And oddly… better the second day. It seemed like the flavors blended better after they sat for a while! Let me know if you try them!
